Trying Out a New Breakfast Recipe

I worked hard this week at Planet Fitness. I took 4 classes this week, which sounds like a lot. However, core and circuit were brutal! We focused on the legs and shoulders and our back and triceps. I didn't realize how sore I was until reached down to pick up my workout shoes so I could do it all over again! LOL! I really enjoy my time at the gym.

I have tried a new quick breakfast recipe I saw on TV, I just kind of made it my own one morning. I wanted something quick but healthy. I call them “omelet cups.”

Five eggs, tri-color bell peppers (1 thick slice form each), chunk of onion, salt/pepper , kale(1/4) cup , 1/2 of sharp cheddar cheese.

I chop up peppers and onions so they would be fine. I mixed all ingredients together, except the kale. I placed each piece of kale in a cupcake pan after pouring egg mixture in.

I used a nonstick cupcake pan, but to be safe I still sprayed with olive oil. Preheated oven to 375° baked for 20 minutes.
